Australian Lamb Innovation Workshop for Chinese Cuisine

Meat Livestock Australia (MLA) organised an Australian Lamb Innovation Workshop for Chinese cuisine on 10 April 2017 at Mandarin Oriental Singapore jointly by Taiwan Master Butcher and MLA Red Majesty Chefs.

Conducted in Mandarin, this workshop featured the mastery butchery of the 6 way cuts of a whole lamb by Taiwan Master Butcher, Calvin Gung and the lamb cuts are prepared in 8 different Chinese cuisine recipes by the MLA Red Majesty Chefs. The session showcase the versatility of the lamb cuts and how it can be innovated into the menu as a new appeal.
